Recipe of the Week: Dijon Chicken Skewers

Ingredients
18 (6-inch) wooden skewers
2 lb fresh chicken breast
1/4 cup reduced-sodium soy sauce
1/4 Dijon mustard
2 tablespoons coconut oil/ olive oil
1 tablespoon garlic blend paste
1 tablespoon ginger spice blend paste
1/2 cup prescliced green onions , divided
if you'd like to try it with pineapple like the pic above just add pineapples to the list!
S T E P S
1. Push sharp ends of skewers through chicken, then place skewers in single layer on baking sheet (wash hands). Combine remaining ongredients (including 1/4 cup green onions and pour over chicken. Let it stand for 15 minutes (or overnight) to marinate. Preheat grill (or grill pan).
2. Place chicken on grill (or grill pan); grill 8-10 mins., turning often, or until cicken is 165 F. Sprinkle with remaining 1/4 green onions. SERVE
